Gardner's Delight

Well the last week has been really busy. For you that plant a garden, you know what I mean. When the bountiful veggies come they must be processed. Last Saturday I started on dill pickles. WHen I was finihed I had 4 quart jars and 10 pint jars of pickles. It is fun, but it takes alot of work. Thanks to my good friend in Wytheville that shared her pickling method with me, it took a lot less time. SAturday evening we visited Tracey's sister, Shriley and WOW does she have a great garden. I have included in this post some of the pumpkins she gave us, were are going to can pumpkin pie mix with them!! The green bean picture is some of the one's my friend in Wytheville gave me. I cooked up some, but parboiled and froze the rest. We ended freezing 5 very full freezer bags. Thank God for the freezer. We also dug up all our onions and had around 30. I froze some those and we are eating the rest. Our carrots did great! They were huge and I dehydrated them with zucchini and packaged them for winter soup consumption. We also checked our Yukon Gold potatoes, and they are huge as you can see in the picture.

Our tomatoes are huge!!! Alot are still green, but some are the size of small melons. I can't wait to start making the salsa and spaghetti sauce adn preserving it for the winter. My next really big job is the white grapes. We have a bunch. We will use them for grape jelly and grape juice. Thank God for allowing us to have this great harvest this year.

WOW! What a bountiful harvest! Gorgeous color. My mom is a gardener and plants a ton of veggies so I know how much work goes into a garden...well done. :)
